Old gods can learn new tricks
To enforce the will of their old ones, priests often create magical beings in their god's likeness. Some say these creations are powered by lesser spirits in service to these deities, while others think deity imparts a small portion of himself to animate them. In either case, they are given the deferential treatment they deserve.
Mission Improbable
In a time and place where gods can walk the earth, it would seem people wouldn't need much convincing of their existence; but some feel they do. And these few build missions like these to spread the word. If you visit one, you may even be lucky enough to find one of those stalwart priest, and not a horrible monster lying in wait.

As outcasts of beholder society, magic using beholders seal their main eye to prevent it from negating their magic spells. Powerful beholder mages sometimes become liches, in which case, their eyes are opened upon 'undeath'.
